Maqluba (Lamb & Walnuts)

8 oz (225 g) lean minced lamb
75-100g (3-4 oz) walnuts, chopped fine
1 tsp sumac
1/2 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp ground cinnamon
1 tsp dried mint
1 egg lightly beaten
2 tbsp olive oil
1 tsp lemon juice
pinch of salt and pepper to taste

Mix together in a bowl the meat, all seasonings, the egg, and the lemon juice and knead thoroughly. Add chopped walnuts and knead mixture more, ensuring the nuts are evenly distributed throughout the mixture. Next, shape the mixture into a large ball. Pinch off small portions and form flat cakes in the palm of the hands.

Heat the oil in a frying pan and fry the cakes on both sides for three or four minutes each side, or until they appear to be done. Can be eaten hot or cold.
