Spatzle

3 cups flour
1/2 tsp salt
2 eggs, beaten
scant 1 cup of milk and water combined
2 tbsp sunflower oil
2 tbsp butter

Sift the flower and salt into a bowl and make a well in the centre.
Add the eggs and enough milk and water to make a soft dough.
Beat the dough until it develops bubbles and then stir in the oil and beat again.
Bring a large pot of salted water to boil.
Dampen a board and place the dough on it.
Shave off strips of dough into the water using the broad side of a knife or use a spatzle press.
Cook for three minutes or until the spatzle rise to the surface..
Remove cooked spatzle with a slotted spoon. Keep batches warm and serve immediately.
