Rutab Mu’assal

1 lb fresh dates
2 tablespoon honey
4 ounces blanched almonds
3 tablespoon rose water or orange blossom water
1/4 teaspoon saffron
2 tablespoon icing sugar
2 tablespoon ground cinnamon

Carefully slit each date down one side and remove the pit. Place an almond into the date and squeeze closed.
Mix together rose (orange blossom) water, honey, ad saffron in a small saucepan, bring to boil and simmer for three minutes. Remove from heat and allow to cool slightly.
Add dates to syrup, spooning it over the dates so that each is thoroughly covered, leave them to soak for a few hours.
Mix the icing sugar and cinnamon, one at a time add the dates and roll each one in the mixture to coat.
