Na’na Mukhallal

(This is an absolutely fantastic palate cleanser! Very tasty!)
4 ounces fresh mint, coarsely chopped
1 ounce chopped celery leaves
2 garlic cloves, finely chopped
8 ounces wine vinegar
1 teaspoon thyme
1 teaspoon basil
a few strands of saffron

Place the mint and all the other ingredients in a tight lidded bottle or jar. Leave for two to four days until mint has absorbed the sourness of the vinegar.
